Brinjal Pickle
Brinjal (also called Aubergine), is a staple of India and many other South Asian countries. It’s taste is quite distinct and memorable for its soft, sinewy flesh when steamed or boiled. Brinjal pickle is really quite a delicacy and makes for a sweet, tangy accompaniment with most Indian curry dishes. It is renowned for having benefits in the management of type 2 diabetes which is a common ailment in the asian sub-continent.
