Ingredients:
Chicken (450g)
Simtom Vindaloo Curry Paste (2tbsp)
Vegetable Oil (2tbsp)
Onion (1)
Tomato (1)
Fresh Coriander (1tbsp)
Chicken Vindaloo
Serves 2 People
Brown one diced onion in one tbsp vegetable oil. Add 450g cubed chicken and fry for 7 minutes. Add 2 tbsp Simtom Vindaloo Curry Paste and one large chopped tomato. Stir in 200ml water. Reduce heat and simmer until sauce has thickened. Sprinkle 1 tbsp of chopped fresh coriander. Serve with rice and a selection of Simtom’s pickles and chutneys.
