Kashmiri Masala
The history of modern Kashmiri cuisine can be traced back to the fifteenth century with the migration of skilled woodcarvers, weavers, architects, calligraphers and cooks from Samarkand to the valley of Kashmir. The descendants of these cooks, the Wazas, are the master chefs of Kashmir. Many famous and widely known Indian dishes have come out of the Kashmir… the ‘prince’ among them being Kashmiri Masala – a hot garlic masala curry concentrate which is spicy, aromatic and full flavoured.
