The very common skewered meat or vegetable food offering had its roots in Arabic and Persian cultures and was a word used to define ‘burning and charing’ meat (‘kababu). This process of cooking meats on a skewer has become so popular in the west that we often forget its original use, where desert travelers wouldn’t be able to cook in pots and pans and had to make do with grilling food on a stick.
