Madras Cooking Sauce
After the British empire, many Indian food stuffs became distinct by region by way of identifying the vast array of food and materials spilling out from the asian sub-continent. A Madras curry or sauce was not for the faint hearted and is well known for being on the hot side of the palate. The rich, red curry mix is highly flavoured with the inclusion of such spices like coriander, turmeric, cumin, bay leaves etc.
