Ingredients:

Simtom Madras Curry Paste (3tbsp)
Vegetable Oil (1tbsp)
Onion (1)
Tomatoes (2)
Mixed Vegetables (400g)
Fresh Coriander (2tbsp)

Mixed Vegetable Madras

Serves 2 people
Brown one chopped medium onion in 1 tbsp vegetable oil, add 3 tbsp Simtom Madras Curry Paste and 2 finely chopped tomatoes and fry for 5 minutes.
Add 400g of mixed vegetables and stir and cook for 8 – 10 minutes.
Stir in 2 tbsp chopped fresh coriander. Cook for a further minute and serve with rice and a selection of Simtom pickles and chutneys.
