Ingredients:
Peeled, Cooked Prawns (400g)
Simtom Curry Paste (2tbsp / 40g)
Groundnut Oil (1tbsp)
Onion (1)
Tomatoes (2)
Cream of Coconut (30g)
Fresh Coriander (2tbsp)

Serves 2 People
Drain 400g (14oz) peeled, cooked prawns. Finely chop 1 medium onion and brown in 1 tbsp of groundnut oil. Add 40g (2 tbsp) Simtom Curry Paste, 2 medium finely chopped tomatoes and fry for 5 minutes. Add the prawns and stir, add 30g (1oz) cream of coconut and cook for 8 minutes. Towards the end of the cooking time, add 2 tbsp chopped fresh coriander. Serve with rice and a selection of Simtom’s pickles and chutneys.
