Rogan Josh Paste
Rogan Josh was brought to India by the Mughals and originally hails from Kashmir. The literal meaning of ‘Rogan’ means cooked in oil and conveys a sense of intense heat. Pepper from Kashmir (Kashmiri Mirch) gives it its distinctive red colouring but not as hot as other Indian dishes. The use of yoghurt in the fat of the meat is an identifying feature of a Rogan Josh dish. Simtom Rogan Josh has been developed by champion chefs for a memorable ‘restaurant style’ flavour.
