Sweet Lime Pickle

Sweet Lime Pickle is made from cut pieces of lime, soaked and marinated in a brine/spicy liquor liquid over a period of time so that the rich flavour of the marinade is soaked into the fruit. The brine impregnated fruit is then sun dried for several days for the full flavour of the briny mixture to permeate the lime. The addition of sugar  gives it a sweet and tangy taste and makes for a great food accompaniment
